I’ve changed the fans the coolent sensor and thermostat but it still overheats and the temperature gauge inside doesn’t slowly rise it starts to skip over

I don't really understand the 'skip over' part, but usually if you are having issues after changing the thermostat the most common problem is air in the system. You can usually burp the system to get it out. Other threads on the site discuss this including this one. Are you certain that the engine is actually overheating? - and that it is just not the gauge telling you that the engine is hot?
