Some reason on her car it takes forever for the car to cool off on max a/c, depends on how hot it is outside, but I put a gauge on the low side and it's very high for 10 minutes and then all of a sudden the gauge starts reading 35-40 on a 90*+ day, could that be a low pressure switch going bad and if that's the case do they even have a low pressure switch on these G6's, just curious..... It almost sounds electrical, because there seems to be plenty of freon in the system.....

Yes, there is a pressure sensor that disables the compressor for too high or too low system pressure.

Is the compressor engaging at all?

Low side pressure has no value for determining refrigerant quantity. Only evacuate and measure or high low gauge set if you have experience.
