I currently own a 2007 Pontiac G6, 233,000 miles and it came with factory installed 17x7 wheels and 225/50/17 tires. Is it possible to switch over to a comparable wheel size and tire size to change the size from a 17" tire to a 16" tire? If so, what's the recommendation for sizes? And will it change the handling and/or performance? Will it affect the front end suspension or anything else that's critical I should know about?

I'm tired of having to purchase 17" tires when it's hard enough finding a decent price in my area, never mind a decent/good tire rating.

Sure it's possible. 225/55/16 is the same diameter within 0.5% .
Yes it will change handling slightly.

The questions you must find the answers to are:
1. Will a 16" wheel clear my brakes?
2. Am I going to save enough on tires to cover the cost of new wheels and still be ahead?

No problem at all. Go with 16" wheels with 215/60-16 or 225/55-16 tires. The 60 series tires will be cheaper. The change in handling will be negligible.

Just go on the net and search for a “tire size calculator”. When you find one like, plug in you current tire size and the wheel size you wish to go to. I think you will like the results.
You should still keep in mind what dxG6 and waterfowler mention in their posts.
